So, I’ve recently been trying to make meal plans for each day of the week in order to try to manage my grocery budget better. Creating a meal plan helps in terms of finding deals in grocery store’s weekly ads and to know when to stock up on certain items when they do go on sale. Tuesday’s are like my “Taco Tuesday’s” kinda meal plan. Instead, I make quinoa enchiladas in my handy dandy slow cooker! (I will definitely share the recipe with you guys below!) Fred Meyer had some of the key ingredients on sale this week and I had to buy at least more than one. Besides the sale items used for my enchiladas, they had great deals on Krave cereal and clearance Downy Unstopables Laundry Scent Booster!

Easy Cheesy Quinoa Enchiladas

I am a lover of slow cooker meals! They are so easy to make and even prepare for when you’re always busy and on the go. Also, ever since I’ve discovered the invention of slow cooker liners… Life is heaven. Here is the recipe! It is delicious and I usually eat it with some sour cream and chips (:

Ingredients:

  • 1 lb of ground turkey
  • 1 orange bell pepper (you can use any color you like)
  • 1 cup frozen corn
  • 1 cup black beans (I use the uncooked ones, but you can use ones in the can too)
  • 1.5 cups quinoa
  • 1 can of enchilada sauce
  • 1 cup of water
  • 1/2 of onion diced
  • 1/2 cup of salsa
  • 1 teaspoon cumin
  • 1 teaspoon minced garlic
  • 1 tablespoon chili powder
  • Salt & pepper
  • 2 cups of cheddar cheese
  • Cilantro

Directions:

  1. Throw in the quinoa, onion, bell pepper, garlic, frozen corn, black beans, and salsa into the slow cooker.
  2. Cook the ground turkey until browned through. Drain any grease and put into the slow cooker. (I like mine a little spicy, so when I do cook it in the pan, I like to put in some Sriracha sauce!)
  3. Add in water, enchilada sauce, salt & pepper, cumin, and chili powder.
  4. Stir everything together and cook on HIGH for 3 to 3.5 hours or until all the liquid has been absorbed and the quinoa is cooked.
  5. When its done, remove the lid and add in 2 cups of cheddar cheese and cilantro. Enjoy with some sour cream, chips, or by itself!
