Salmon & Avocado Eggs Benedict with a Healthy Hollandaise Sauce

I went to a restaurant named Indigo and they served this smoked salmon eggs benedict for their brunch and it was absolutely amazing! Ever since then, I’ve beenΒ wanting to make eggs benedict at home. When I looked up how to make hollandaise sauce, I realized that it was pretty much egg yolks and butter. Why do the best things in life have to be so delicious with butter… I’ve been trying to make better eating decisions, cooking my own food, and finding healthier alternatives to some of my favorite foods. So, I decided to find and whip up a healthy version of hollandaise sauce that was super simple and also very delicious (:

Healthy Hollandaise Sauce:

  • 1/2 cup of greek yogurt
  • 1/2 tsp of dijon mustard
  • 1 egg yolk
  • Dash of parsley flakes
  • Dash of red cayenne pepper
  • Squirt of lemon juice

And just like any other eggs benedict–toast your muffins and poach your eggs (: This meal was super quick and easy to do!

Overnight Oats

I never have time to eat the most essential meal of the day, breakfast. I’m either just too lazy to make something or hate that I have to force myself to eat. Making “Overnight Oats” is the most easiest thing you do, no prep in the morning. Just make it the night before, leave it in the fridge, and bring it with you out the door!

Here is how you make it!

Ingredients:

Oats, greek yogurt (I personally like vanilla :D), cinnamon, almond milk (any milk that you prefer, I like to get the unsweetened king when I get soy/almond milk), & honey

You grab a mason jar or any kind of jar (or even just a tupperware of any kind, my mom likes to get these really cute and cheap jars with a handle at Daiso ^,^). Then put as much oats as much as you would like in the morning. Mix in 1/2 cup of almond milk and 2-3 scoops of greek yogurt. When mixing it together, it shouldn’t be liquidly. It should sort of feel kind of thick. If it is very liquidly, add more oats or more greek yogurt!

VIOLA! The oats have absorbed the milk and yogurt and you still get the oatmeal consistency without all the “mush.” You can add fruits in the morning or mix in a small spoonful of peanut butter (like I did!).
